THE SEASON OF BROTHS IS HERE

There’s nothing quite like a bowl of broth — whether to keep you warm in the rain or to help you stay hydrated.

 

HOW IS BROTH DIFFERENT FROM SOUP?:-

“Broth is liquidy and clear, while a soup is thicker.” Soup is made from either broth or stock, with other ingredients added for texture and flavor. He recommends the use of raw vegetables like onion, celery, carrots, and sometimes garlic, tomato paste, and other veggies for a good broth.

 

EASY BROTHS RECIPES TO TRY AT HOME:-

THAI LEMONGRASS BROTH:-

Ingredients:- 

  • 1 tbsp vegetable oil 
  • 3 minced garlic cloves 
  • 1 inch ginger
  • 2 stalks of chopped and bruised lemongrass
  • 1 sliced onion 
  • 1 carrot 
  • 1 zucchini 
  • 1 red bell pepper
  • some mushrooms 
  • 1 potato peeled and diced 
  • 1 tomato chopped 
  • 1.5 liter water 
  • 1 coconut milk can 
  • 2 tbsp soy sauce 
  • 1 tbsp each of fish sauce (optional) & lime juice 
  • Chopped basil leaves and cilantro (kothmir)

 

Method:-

In a large pot, heat the oil. Add the garlic, ginger, and lemongrass. Saute for 2 minutes. Add the veggies and cook for 7 minutes. Add water and cilantro (kothmir). Bring to a boil, then reduce heat and simmer for 40 minutes. Strain the broth and return to the pot. Stir in the coconut milk, soy sauce, and fish sauce (if using). Simmer for another 5 minutes. Add the lime juice and adjust seasoning with salt and pepper. 

 

TAMATAR KA SHORBA:- 

Ingredients:- 

Boiled Ingredients:- 

  • 5 gm each of barley (cooked in water or vegetable stock)
  • Whole wheat, sweet, corn, diced carrots, green peas, and sliced French beans. 

 

For stock:- 

  • 100 gm chopped tomato 
  • pinch of kasuri methi, sugar,salt, and red chili powder.
  • 5 gm of crushed ginger, garlic, and lime juice, and some mint leaves. 
  • 10 gm of chopped coriander 
  • 300 ml of water – make a small bag of spices by adding clove, peppercorns, bay leaf, and cinnamon. 

 

Method:- 

In a pot, add chopped tomatoes, the spice bag, ginger, garlic, and red chili powder. Add water, and boil till tomatoes are cooked. Add kasuri methi and cook for 5 minutes. Remove from the flame, take out the spice bag, blend and strain. Add the boiled ingredients to the broth. Cook for 10 minutes, then add lime juice, salt, and sugar. Add water to give a thin consistency. Garnish with mint and coriander.

  • Broth contains essential nutrients including vitamins, minerals, and antioxidants, but is a low calorie item. 
  • It is easy to digest and reduces inflammation caused by humidity. 
  • Homemade broth broth is rich in sodium, potassium, and magnesium, which is necessary for hydration. 
  • A pinch of turmeric in broth makes it anti-inflammatory and high in antioxidants, ideal for people suffering from joint and muscle pain in the monsoon. 

 

Note:- If you are feeling under the weather, drinking broth can help alleviate symptoms like stuffy nose, cough, sore throat, headache, body pain, and cold.
