FIVE MUST-HAVE KHICHDIS THIS MONSOON

All indispensable parts of the monsoon, khichdi is something we all secretly love to relish throughout the year. From serving as the perfect comfort food when we are ill to tickling our tastebuds when we are hale and hearty, the many variations of this dish can surprise you. What else can turn out to be delicious using just a pressure cooker and a handful of commonly found ingredients! PALAK AND CHICKEN KHICHDI:- 

Out of the few non-veg khichdi dished we know, this one is surely special. With ingredients like sauteed chicken legs, chopped spinach (blanched) and other common spices, this is a complete dish that can be given without any accompaniments. You may garnish it with fried onions and julienne garlic and season with a few drops of ghee. Onion raita serves as the best accompaniment to this.

 

BHOG KHICHDI:- 

An essential component of every Durga puja, this dish mysteriously tastes best when prepared for the deities. However, since it’s cooked using cauliflower, green peas, and potatoes, this khichdi turns out to be pretty awesome even when made at home on a rainy afternoon. Being a pure veg dish, onions are not a part of the recipe. To make this, you need fried moong dal and rice in 60:40 ratio. Chutney, papad, and all kinds of fried veggies go well with the dish.

 

FRIED KHICHDI:- 

This is a drier version of the regular khichdi, with a non-vegetarian twist. Cooked mainly with masoor dal, moong dal, mutton or sometimes beef, the dish tastes more like pulao. The best part about the khichdi is that it’s not spicy and tastes absolutely delicious with chutney and any kind of fried accompaniment.

 

KHICHDA:- 

This non-veg dish, more prevalent in neighboring Pakistan, has a Mughlai hangover. It’s made using three types of dal — chana, arhar, and moong, apart from dalia and rice, which are cooked with mutton and home spices. The speciality of this deliacy is that unlike other types of khichdi, it tastes best with yogurt.

 

PANEER KHICHDI:- 

Very few people would think of this unusual combination while preparing khichdi. But trust us, it tastes divine! This is a veg khichdi made with moong dal and rice. Mixed with green peas, it looks a bit like porridge. If you can manage to get hold of some fried fish. It could be an unforgettable gastronomical experience!
